Bokking (Smoked Herring)

Four smoked herrings laid head to tail on a sheet of white paper, their skins burnished to oily gold. This is the old fish-stall subject, where the whole point is freshness on the turn, a gleam that will not last the day. Wiedijk catches that wet metallic sheen exactly, and with it the faint salt of the harbour.
